RAW MEAT PRALINE
Ingredients for 4 people:
280g of La Granda raw meat
400 g of cooking cream
10 anchovy fillets in oil
15 g of chopped hazelnuts
Oil to taste
Pepper as needed
Salt to taste.
Season the meat with oil, massage for a minute and give the desired shape. In a saucepan, combine cream and anchovies.
Simmer the mixture for a couple of minutes.
Once cooked, with the help of a blender, blend the mixture.
Pour 3 tablespoons of hot sauce into the center of a bowl.
Create a sphere with the raw meat and bread it in chopped hazelnuts. Place it on the plate.
