Ingredients for 4 people:


1 kg of asparagus

200g of Gradisca La Granda

Salt to taste.

Pepper as needed.

Oil to taste

4 egg yolks

200ml of water

200 g of grated Parmesan

4 Albums


Pour 200 ml of water into a bowl and place 4 egg yolks and a drizzle of oil inside and mix the mixture. Bake in the oven at 60 degrees for 35 minutes. Procedure for the parmesan brittle: Combine the parmesan with the 4 egg whites. Mix with a wooden spoon.

Roll out the mixture between two sheets of baking paper with the help of a rolling pin. Cook at 170 degrees for 20 minutes in a static oven.
