CRUSTED SIRLOIN WITH VEGETABLE CAPONATA

Ingredients for 4 people:

 

4 medallions of 200 g of La Granda sirloin

20 g of mustard

1 roll of rectangular puff pastry

1 egg

1 aubergine

1 red pepper

1 yellow pepper

2 courgettes

Oil to taste

Salt to taste.

Pepper as needed.

 

In a non-stick pan, sear the medallions evenly. Salt and pepper to taste. Leave to rest for 15 minutes. Massage the medallions with the mustard. Cut the puff pastry into four parts and wrap the medallions in each of these. Take care to position the two edges of puff pastry in the part in contact with the pan. Beat the egg in a bowl and brush it over the entire surface of the puff pastry. In a preheated oven at 180°, cook the sirloin for twenty minutes. Clean the vegetables and cut them into cubes. Cook in a preheated oven at 200° for 15 minutes.
