Season with salt and pepper to taste and leave to rest for about ten minutes.<\/p>\n<p>Cook the meat in a preheated oven at 200\u00b0 using a probe thermometer, setting the core temperature.<\/p>\n<p>Bloody: 45\u00b0 \u2013 Medium done: 55\u00b0 \u2013 Well done: 68\u00b0<\/p>\n<p>Clean the vegetables. Cut the asparagus into flute beaks (oblique slices). Slice the almonds.<\/p>\n<p>Season everything with oil, salt, pepper and lemon juice to taste.
